Waffle Wednesday: Jam Swirled Waffles

I don't know if you know this....but its super hot down here......and that makes everyone tired, lazy, sweaty, and ready to stay inside.....

I mean, its just the 2nd day of summer and we've already had our fair share of 100 degree days....but, I digress........I know all of this ranting leaves you with one question:

So, where does this leave B's passion for waffles??????

Don't fret....its still here...

this weather just drives me to search for lighter varieties of waffles (don't worry...I have plenty more hearty ones where my apple bacon waffles came from)....such as ones with fruit or lemon flavors inside.

So, I scoured my fave blogs to come up with some ideas.....and here is what I came up with....

Personally, I think it was a great combo!


Jam Swirled Waffles!  I dolled them up with more jam, sliced bananas, and a smathering (is that a word?  well, it is now) of butter.......mmmmmm, a great way to start a Wednesday morning!

Here is all you need to make these light and airy waffles....this would also be good served with greek vanilla yogurt sprinkled with cinnamon and chocolate chips, or just your regular butter/maple syrup combo........anyway you serve it, its a great summer treat....

 
canola oil, sugar, 1 egg, baking soda, baking powder, vanilla extract, cinnamon, all purpose flour, and strawberry jam (or another other jam you would like...even orange marmalade would work)

Its the basic mix dry ingredients (flour, sugar, baking soda, baking powder, and cinnamon) together and set aside. 

Stir wet ingredients (buttermilk, vanilla extract, canola oil, 1 egg) together in another bowl.  Add wet to dry and mix thoroughly until just combined. 


Ladle batter into preheated waffle iron and cook until green light goes on.  Pull waffles off the iron and serve with your favorite toppings.....NOTE:  these waffles are super light and easily pull off the iron, and from one another...so, if you are looking for a waffle to stay together, this one isn't your one.  But, if you are looking for something that is super fun to work with, then this is your waffle!!

Jam Swirled Waffles
adapted from Crumbs and Chaos and Joy the Baker

Print this recipe!

Ingredients:
1 cup all purpose flour
1/4 cup sugar
1 1/4 tbsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp vanilla extract
1 cup buttermilk
1/4 cup canola oil
1 egg
2 soup spoons full (about 1/4 cup or so) of strawberry jam (seeded or seedless, your choice)

Directions: 
**Preheat waffle iron first thing**
1.  Combine all the dry ingredients (flour, sugar, baking powder, baking soda) in a large bowl.  Set aside.
2.  In a smaller bowl, mix buttermilk, egg, oil, and vanilla extract.  Mix together and set aside. 
3.  Add 2 spoonfuls of jam and whisk.  Add more if desired.  Batter will be thin with small lumps.
4.  In a preheated waffle iron, ladle batter onto iron and cook until desired degree on doneness. 

Serve with either butter and maple syrup or butter with extra strawberry jam with sliced banana or with vanilla greek yogurt and fresh berries or cottage cheese and berries....the choices are endless!  Pick one that works for you and yours!
