Recipe Re-creation: BBQ Chicken Pita Pizzas

Well, WTR readers...its just plain hot here in SC and I find myself craving more salads, sammies, and quick pizzas for dinner instead of my usual hearty pastas and risottos I'm known for! 

This is a take off of a frozen pizza I had over the weekend and I decided I wanted to recreate it and make it a bit healthier.  Enter the bbq chicken pita pizza....imagine juicy chicken, cheese, bbq sauce, onions, and corn over a toasty whole wheat pita!  Quick, simple, and very perfect for those hot days!

Here is what you'll need:

3/4 pound chicken tenders, salt, pepper, bbq sauce (I used Bullseye original), shredded cheese, frozen corn, frozen chopped onions, canola oil, and whole wheat pitas.

First, preheat skillet to medium heat and add 2 tsp canola oil.  Season 1 side of the chicken with salt and pepper and place seasoned side down in skillet once warm.  Season other side of chicken and let cook, 4-7 minutes until fully cooked all the way through, turning only once. 




Next, you will take the chicken out and place it in a plate.  Add frozen chopped onions and corn and allow both to saute in skillet for 1-2 minutes until warmed through and golden.



Then, taking two forks (or in my case..a fork and a knife) and shred up the chicken pieces.



The only thing left is assembly....very easy and quick.......take your pita and then spread it with a couple of glugs of bbq sauce (more or less depending on how saucy you want your pizza to be...i know you love my precise measurement words)




Then sprinkle with corn and onion mix...I did about 2 spoonfuls of it on each pizza.




Then, top with chicken and sprinkle with cheese.






Put in toaster and toast 3-5 minutes until cheese is melty and pita is crispy and warm.

Slice and serve.  I served mine with baby carrots and ranch dressing, but just about any side salad would work as well!
