So, 1-2 and I don't get that many Wednesday mornings together (we have jobs in different cities), so when we do...and he suggests a waffle, I listen.....
Well, let me explain....I listen if his suggestions deal with food that is....as for the other stuff.......that depends on the situation ;)
He loves my chocolate chip waffles. And it was one of the first waffles I ever made. So, that made my morning very easy this morning......
Quick, chocolatey, and fun....make it for yourself this weekend!
Ingredients are simple (check out how fluffy they are..and huge! I love my belgian waffle maker):
Bisquick Heart Smart, whole wheat flour, sugar, cinnamon, canola oil, milk, and 1 egg. Oh yeah, and chocolate chips....dark chocolate chips...
Mix dry ingredients together. Pour in milk, egg, oil and stir until just mixed. Stir in chocolate chips. Ladle into preheated waffle iron until they are ready....serve with butter and syrup, or plain, or with yogurt and fruit...the choices are endless here! This made 4 huge waffles...enough to feed my hungry man and give him some leftovers for later on in the week, when he craves some of my cooking....
Lets be real for a second, that is what I'm thinking he thinks--"Oh I miss my B, she's the greatest, so I'll eat some of her waffles and think of her"...
...he'll just think--"Oh wow, there are waffles left in the freezer for me to eat..no McDonald's for me this am!"
Either way, they are simple and delicious! And oh yeah, I used dark chocolate chips and whole wheat flour...which means I snuck in extra antioxidants and fiber without him even knowing......I'm so sneaky heh heh heh
Its 1-2 tested and approved.......he only agreed to be in the blog with this face....and somehow the 2 thumbs up he was giving was cut off???? Oh well, the joys of learning how to photograph food, people, and pets.......

Dark Chocolate Chip Waffles

Ingredients:
2 cups Bisquick Heart Smart Pancake Mix
1/2 cup whole wheat flour
2 tbsp sugar
1 tsp cinnamon
1 egg, slightly beaten
1 1/2 cup milk (I used 2%)
2 tbsp canola oil
4-5 HEAPING tsp dark chocolate chips (I used 5 here)
Directions:
1. Preheat waffle iron.
2. Mix Bisquick through cinnamon together and lightly whisk to combine.
3. Pour in milk, egg, oil and stir until just combined.
4. Mix in chocolate chips and give it a quick stir to mix all together.
5. Ladle batter onto center of iron and close. Cook until golden brown or green light says they are ready.
6. Serve with butter and syrup, plain, or with yogurt and fruit....vanilla greek yogurt and some berries would be delish!!!
Makes 4 large belgian waffles. What you don't use, just wrap in tinfoil and freeze.
